Divine chocolate truffles with Armina Rose Water

The combination of chocolate and rose water must have been some of the stuff offerings to gods and goddesses were made of.
Pavla, an artist, and a young mum, has revealed for us mere mortals the secret recipe for her divine truffles, delicious and rich, yet simple and easy to make.
Ingredients for 35 pieces:
• 200g organic dates,
• 200ml organic coconut cream (or double cream),
• 80g organic almond tahini,
• 140g organic dark chocolate with ≥70% cacao (melted in a water bath),
• 70g organic coconut oil,
• 80ml organic Armina rose water
Whizz all ingredients and 70g of the melted chocolate in a blender until very smooth.
Cover the mixture and let it solidify in the fridge for at least 3 hours.
Roll small balls and return them to the fridge for half an hour.
In the meantime, melt the remaining chocolate, dip the balls for a thin, crusty icing, and chill for 10 min.
If you can resist not eating them in one go, store them in the fridge for up to a week.
